Ahhh Bali – sun, sea, exotic fruit and coconuts! My favorite way to start the morning when I’m on the island is to do yoga or go for a beach walk and enjoy a nutritious breakfast afterwards. This yummy berry and passionfruit chia pudding always hits the spot. Try it at out and bring those Bali vibes into your home!
Chia contains a lot of omega-3 fatty acid as well as protein, almond milk supports our body with b-vitamins and berries offer lots of important antioxidants.
Ingredients (2 servings)
½ cup chia seeds
2 cups almond milk
1 – 2 TB maple syrup (or other sweetener of choice)
½ tsp vanilla extract
2 hands full of fresh or frozen berries (e.g. blueberries, raspberries)
1. Combine almond milk, chia seeds, maple syrup and vanilla extract well and let the mixture sit for 10 minutes. Stir, cover the mixture and refrigerate for at least 1 hour or overnight.
Tip: For a quick breakfast I recommend preparing the chia pudding at night. Then all you have to do is add your favorite toppings in the morning.
2. Top the chia pudding with berries and passionfruit to serve. Enjoy!
